I highly recommend reading Tom March's (www.ozline.com) authoritative work on activity formats,
Working the Web for Education: Activity Formats. Each
of the activity formats is discussed in his article in detail.
Or, read Activity Formats which includes examples of the various
formats, as well as when to use them. (Note publication date
of 1997.)
Here is a summary.
A hotlist is collection of Web sites focused on a single
topic. The goal of a hotlist is to provide students with pre-selected
sites for research and exploration of a topic.
Examples:
Life in the Middle Ages
Ocean Life
A knowledge hunt also includes a collection of Web sites
(10-15), but the purpose of a knowledge hunt is to have students
find specific information about a topic. Traditionally one question
is asked for each site given. The inclusion of a "Big Question"
gives students an opportunity to synthesize the information
they have learned.

A subject sampler contains a smaller collection of Web
sites (3-6). Students are asked to personally respond to the
Web sites through a series of activities such as journal writing,
poetry writing, or artwork. The purpose of a subject sampler
is to get students to feel connected with, or care about, the
topic, not necessarily to acquire information.

A WebQuest is used to engage students in higher level
thinking. Much has been written about the nature of WebQuests,
which include six components, Web resources being one of them.
According to Tom March, one of the original developers:
WebQuests use an essential question to prompt student groups
to explore answers from a variety of perspectives or roles.
Students use compelling Web sites as well as local resources
to develop individual expertise that's brought back to the
group to produce a consensual answer to the original question.
